6 eggs, lightly beaten

16 oz (one carton) cottage cheese 

2 Tbs maple syrup 

2 Tbs melted butter

2 Tbs lemon zest, 2 Tbs vanilla extract 

1 1/2 C flour (wheat, sourdough, or GF)

1 Tsp baking soda and 1 Tsp baking powder

1/2 Tsp salt


1. Mix all ingredients together until moist  (batter should be slightly lumpy)

2. Add 1/2 cp of batter to medium heat (on a buttered pan) 

3. Cook about two minutes on each side, or until edges are browned
